Description

The Carolina Reaper is officially the world’s hottest chilli pepper, as recognized by the Guinness World Records in 2013. Developed by Ed Currie of the PuckerButt Pepper Company, this fiery chilli is a hybrid of a Pakistani Naga and a Red Habanero. Known for its intense heat and fruity flavor, the Carolina Reaper has a distinctive appearance with a rough, wrinkly skin and a sharp tail at its tip.

Scoville Heat Rating

The Carolina Reaper boasts a heat level ranging from 1,641,183 to over 2,200,000 Scoville Heat Units (SHU). Its fiery nature makes it a favorite among spice enthusiasts, but it should be handled with care to avoid burns or irritation.

Growing the Carolina Reaper

Ideal Conditions

  • Climate: Thrives in warm, sunny climates.
  • Temperature: Optimal growth occurs between 20°C to 30°C (68°F to 86°F).
  • Soil: Requires well-draining, nutrient-rich soil with a pH of 6.0–6.5.
  • Sunlight: Needs 6–8 hours of full sun daily.

Planting Tips

  • Start seeds indoors 6–8 weeks before the last frost.
  • Germination can take 7–21 days; keep soil consistently moist and warm (around 27°C/80°F).
  • Transplant outdoors when the temperature consistently stays above 15°C (59°F).

Watering and Fertilizing

  • Water deeply but infrequently to encourage strong root systems.
  • Use a balanced fertilizer during the vegetative stage, switching to a low-nitrogen fertilizer once fruits begin forming.

Harvesting

Carolina Reapers are ready to harvest approximately 90–120 days after planting. Ripe pods are vibrant red with a glossy sheen. Use gloves when handling to avoid skin irritation, as the capsaicin content is extremely high.

Uses

The Carolina Reaper is prized for its versatility:

  • Culinary: Adds intense heat to sauces, salsas, and spicy dishes.
  • Preservation: Ideal for making hot sauces, dried powders, or infused oils.
  • Challenges: Often used in extreme heat challenges for spice enthusiasts.

Caution

Due to its extreme heat, always handle Carolina Reapers with care:

  • Wear gloves when harvesting or preparing.
  • Avoid touching your face, especially eyes and mouth, after handling.
  • Keep away from children and pets.

Fun Fact

Despite its intense heat, the Carolina Reaper has a surprisingly sweet, fruity flavor beneath the spice, making it a complex and sought-after ingredient in gourmet kitchens.
