Lemony Smashed Pea Ciabatta

Move over avocado, these smashed pea toasts will steal the show! Smashed pea and lemon paired with fresh garnishes – perfect for a fun snack, appetiser, breakfast, or light meal.

Ingredients:

  • 1 garlic clove, crushed
  • 2 cups shelled peas (frozen are fine)
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/4 cup fresh herbs, parsley or chives are best
  • 1 loaf of Ciabatta bread, sliced
  • 3 tbsp olive oil
  • Salt and pepper to taste

Method:

  1. Combine garlic, parsley, 1 tablespoon oil, a pinch of salt, and 1/2 cup water in a small saucepan. Add peas and cook over medium heat, stirring occasionally, until peas are tender, about 5 minutes for fresh peas, about 2 minutes for frozen. Drain, reserving cooking liquid.
  2. Transfer pea mixture to a food processor; pulse until a coarse paste forms. Transfer to a medium bowl; mix in herbs, lemon zest, lemon juice and 2 tablespoons oil. Stir in reserved cooking liquid by tablespoonfuls until mixture is still thick but spreadable.
  3. Drizzle toast with oil; top with pea mash. Season pea mash with salt, black pepper, herbs and more lemon juice, if desired.
