Mandarin and Date Muffins
Mandarins are a winter staple, they are rich in Vitamin C and Vitamin A, which are beneficial for fighting off those winter colds and flus. If you’re looking for a delicious way to incorporate mandarin into your diet, then our Mandarin and date muffins are a must try. Packed with flavour and the goodness of fruit, these muffins won’t disappoint.
Servings: 12 muffins
Ingredients:
- 4 mandarins peeled (seedless will be the best)
- 1 Egg
- ¼ Cup Maple Syrup
- 1/3 Cup Olive Oil
- 1 Cup of Flour
- 1 ½ teaspoon Baking Power
- ½ Cup Wheat Bran
- ½ Cup chopped dates
- Mandarin segments for decoration
Instructions:
- Place the four peeled mandarins in a food processor and mix
- In a separate bowl, sift flour and baking powder together
- Add bran to the bowl and mix
- Pour in the liquid ingredients, mix gently until just combined
- Gently stir in the chopped dates
- Spoon into a greased muffin tray
- Top each one with a mandarin segment
- Bake at 180 degrees for 15-30mins. Cook until golden brown and cooked inside (check this using a toothpick, poke a hole in the center of the muffin, if it comes out clean, it’s cooked)
- Let the muffins sit for 5 minutes, remove them from the muffin tray and place them on a cooling rack to cool.
