Ingredients
2 cups of flour
1 1/2 tsp baking soda
1/4 tsp ground cinnamon
1/4 tsp ground ginger
3/4 tsp salt
3/4 cups butter
1 cup sugar
1 large egg
1/3 cup of oats
3/4 cup of grated carrot
Method
- Preheat oven to 180 degrees and line a baking tray with baking paper ready for the cookies.
- In a large bowl, whisk together the flour, baking soda, cinnamon, ginger and salt and then set aside.
- With a mixer beat the butter and sugar together until light and creamy. Beat in the egg and oats until well-mixed. Beat in the flour mixture until both are combined.
- Scoop out the cookie dough and roll into balls then flatten on the tray. Ensure the cookies are placed 2 inches apart as they will expand when in the oven.
- Bake for 10 to 12 minutes or until golden brown. Leave to cool.
