Ingredients
- 4 lemons
- 180g butter (unsalted)
- 250g caster sugar
- 3 Tbl Manuka honey
- 3 beaten eggs
Directions
- Very finely, pare the rind from the lemon, being careful to avoid the white part
- Cut the peeled rind into very fine strips
- Squeeze the juice from the lemon and strain
- Melt the butter in a large saucepan, add the sugar, lemon juice, finely chopped peel and beaten eggs, stirring continually until the mixture starts to thicken
- Stir from time to time until the mixture coats the back of a spoon
- Remove from heat and once cooled, place in jars
- This is a great product to have in the fridge, use it as a preserve on toasted sourdough, blueberry pancakes with whipped cream and a dollop of lemon honey or just on vanilla ice cream
